TMFC: Cucumber Salsa

Too! Many! Fucking! Cucumbers!

I'm trying my best I've had salads. I've made soup (recipe for which will be soon). I've thrown one away and given one away. But the cucumbers keep coming.

Make pickles, you say! But there's only room for so many mason jars in the fridge, and there's only room for so many pickles in my life. So I need other options.

Like this cucumber salsa. Very simple, very easy. Lots of crunch and brightness, keeps forever thanks to the acid, and is really nice on a taco. You'll need:

  • One medium cucumber, peeled, seeded, and diced small (about 1/4 inch).
  • One poblano pepper, minced
  • Four cloves of fresh garlic (I'd use a bit less if it's raw store-bought garlic)
  • About 3 tablespoons fresh lime juice
  • 1 tsp salt
  • 1 tsp cumin

 

PREP/COOKING:

Chop the vegetables as indicated. Crush the garlic. Combine. Done.

As a serving suggestion, why not use it to top your favorite taco, like these chicken tacos on the left. It's not really a chip kind of salsa, although there's nothing really stopping you from trying.

Makes about two cups worth, or enough to top about... ten tacos, if I'm remembering the dinner, the leftovers dinner, and the leftovers lunch correctly.
