So. I've got all this fucking kohlrabi.
After doing the roasted kohlrabi thing and finding it passable, I wanted to try a raw application. I started looking in the Epicurious iPad app, which is... OK as a recipe source goes. I always find less than I'm expecting to, but I usually find something.
What I found this time was a raw kohlrabi and granny smith salad, which seemed like a good idea except for the dressing. which started with soft-peak whipped cream, then added mustard, lemon juice, parsley, and sugar. It sounded completely fucking disgusting.
Well, except for the mustard. The mustard I kept. Some apple cider vinegar to match with the apple, some of the fresh dill I'd bought for the pickle relish, and I was off. You'll need:
PREP / ASSEMBLY:
Cut the kohlrabi into matchsticks. Quarter and core the apple. You can peel it if you want, but I didn't want to. You can cut the apple any way you want, really - I went with a very rough julienne and didn't care when some of them turned into chunks.
Then just whisk together the dressing in a medium prep bowl, adjust the seasonings to your taste, and toss the apple and kohlrabi until it's thoroughly coated in the dressing.
The honey is in there to balance the slightly turnippy bitterness in the kohlrabi. The apple and apple cider vinegar do a nice job of making the whole thing nice and fragrant. I served it alongside some roasted mini-potatoes from the CSA and a pan-roasted chicken breast, and it was pretty damn good if I say so myself. And I have to say so myself, because none of you ate it.
