Hey, look, it's another taco! Let's give this baby the exploded view, as Tony Stark might say.
Toasted corn tortilla on the bottom. Not doubled as is traditional because I love corn tortillas only slightly more than I hate the hassle of toasting them.
The flank steak: rubbed with salt and cumin on both sides, plus chipotle on one of the sides, then grilled off and thinly sliced.
Corn relish: a quick substitution due to being out of beans. Red onion and poblano pepper, sauteed with salt and pepper until soft, then cooked with frozen yellow corn for a bit.
Fresh salsa: recipe imminent.
Chopped spring mix and fresh avocado slices: self-explanatory.
Glorious taco goodness.
