Fickle Fork of Fate

Borsetti in Tomato-Basil Broth

So here's the deal. I bought these borsetti at Costco last week, because they were filled with goat cheese and herbs, and sounded really good. So the weekend rolled around, and I hadn't gotten to them yet.

I wanted something simple and easy, something light that wouldn't fight with the goat cheese filling, so I decided on a broth-based sauce.

All this was was some lightly sautéed garlic, about two and a half cups of homemade broth, half a package of basil, the tops of some green onions, and one diced tomato, simmered together for about ten minutes and poured over the borsetti once they were done boiling. The whole thing took maybe fifteen minutes start to finish once I'd thawed the broth, so that worked out nicely.
