Ah, to heck with it. I found the image of the specific spice pouch I bought, and I've got ten minutes. I'll write it up now.
This is the thing I bought over the weekend at the Indian grocery on a whim, because it's the first time I've ever seen this celebrity chef, sans-serif, Western-style packaging on Indian food products. I don't know what a Kadhai Fry is, but the name caught my eye.
The directions on the back are... less than helpful. They say to put the contents of the packet in the pan along with 500 grams of chicken and 2 cups of water, then cook for 10 minutes covered and five minutes uncovered. That's all. Should the pan be hot first? It doesn't say. Should you cook at a boil, or a low simmer? Doesn't say. What kind of chicken? Doesn't say.
I went with a pack of chicken tenders from Costco, which worked out to almost 500 grams perfectly. I decided I'd mix the spice packet and the water in the pan, bring that to a simmer before adding the chicken, then start the countdown timer on a high simmer. It worked out pretty good that way. The sauce needed another minute or so uncovered to finish tightening up.
The result wasn't super-interesting. Sort of a generic spicy Indian red sauce. But given how much time I'd spent on the aloo palak, I knew I was going to need something simple to go with it, and it fit the bill. Plus, again, that packaging. Not a single fucking picure of the Taj Mahal anywhere near it.
