Kontos Panini Bread

Look at that sandwich! I'm not making that!I first discovered this stuff earlier this year in the deli section at Cub Foods. I'm frequently... disappointed by grocery store pita bread as a platform for foods, aso I thought perhaps this might work better. It's not really a proper substitute for good pita, but it does have its uses.

First, the stuff is huge. At least nine inches in diameter. This is not the most convenient size for sandwiches, and it's a bit too large to fold. But it's good for open-face stuff, and it's great as a basic flatbread for grilled flatbread pizza, which is on tonight's menu, hence this preparatory post.

The reason it's panini bread, as far as I can tell, is that it's got a bit more sugar in it than a regular flatbread. So that when you grill it, you get nice grill markings on it, and when you slap it in a panini press, I presume it has the same effect. I don't have a panini press, because, well, I'm not a mediocre coffee shop.

Also, if you're a fiend for carbs like I am, it makes a really nice munching bread - you can dip it in hummus, you can eat it with cheese, etc. It's sturdy and tearable and generally good with dips right out of the bag, and it keeps pretty well, too.

It's from New Jersey, so it won't improve your locavore cred, and it's wrapped in plastic, so it won't help with your scratch baking cred, either. But oil it up, slap it on the grill, crisp it up, top it with veggies, cheese, and pesto, and pop it in the oven for a bit? Good shit, and you will hopefully see in a few hours.
